Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground turmeric
- ½ tsp cayenne pepper
- ½ tsp paprika
- ½ tsp salt
- 1 cup green or brown lentils, rinsed
- 4 cups vegetable broth
- 2 cups water
- 1 can diced tomatoes
- 1 zucchini, diced
- 1 cup frozen green peas
- Juice of 1 lemon
- Fresh cilantro for garnish
Instructions:
- In a large non-stick pot, heat the olive oil over moderate heat. Add the onion and garlic, and prepare until it gets soft and translucent about 5 mins.
- Add the carrots and celery to the pot and cook for another 5 mins.
- Add the cumin, coriander, turmeric, cayenne, paprika, and salt to the pot and whisk to combine. Cook for 1-2 mins, until fragrant.
- Add the lentils, vegetable broth, water, and diced tomatoes to the pot. Take to a boil, then reduce heat to low and simmer for 25 mins, or until the lentils are soft.
- Add the zucchini and green peas to the pot, and cook for another 5 mins or until the veggies are tender.
- Stir in the lemon juice and adjust the seasoning to taste. Serve hot, garnished with fresh cilantro. Enjoy!
