This warm and comforting bowl of goodness is made with wholesome quinoa, creamy almond milk, and a mix of sweet and juicy berries. Topped with crunchy almonds and a drizzle of honey, this porridge is a nutritious and delicious way to start your day.
Ingredients:
- 1 cup quinoa
- 2 cups water
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground cardamom
- ¼ tsp ground nutmeg
- Pinch of ground cloves
- ¼ tsp salt
- ¼ cup sliced almonds
- ¼ cup mixed berries (fresh or frozen)
- ¼ cup milk or milk alternative of your choice
- 1 tbsp maple syrup
- Fresh mint, for garnish
Instructions:
- Thoroughly rinse the quinoa in a fine mesh sieve and drain it. Bring the quinoa, water, cinnamon, ginger, cardamom, nutmeg, cloves, and salt to a boil in a medium saucepan.
- Turn down the heat, cover the pan with a lid, and let the quinoa simmer for 15 mins until the water is absorbed and the quinoa is soft. Quinoa is mixed with almonds and berries.
- Divide the quinoa mixture into 2 bowls and pour in the milk or milk alternative. Drizzle the maple syrup over the top of each bowl of quinoa porridge. Garnish with fresh mint and serve immediately.
